Coarsely grate the 200 g (7 oz) of Halloumi. In a mixing bowl, whisk together the 2 tablespoons of yogurt, 1 tablespoon of olive oil, 1 teaspoon of Ras el Hanout, and 1 teaspoon of paprika powder until smooth.
Gently fold in the grated Halloumi until evenly coated.
Place a silicone liner into your air fryer basket and spread the Halloumi mixture evenly across it.
Air fry at 200℃ (392℉) for 10-15 minutes until slightly golden and crispy. Let it cool down slightly at the end of the cooking time.
Make the Yogurt Sauce
While the cheese is cooking, peel and crush the½ clove of garlic.
Whisk it together with the 150 g (5.3 oz) of yogurt until smooth, then season with salt and pepper to taste.
Prepare the Filling
For the filling, dice the tomato and the peeled ½ cucumber.
To avoid excess moisture, remove the core of the tomato and scoop out the cucumber seeds before dicing.
Peel the ½ red onion and slice it into fine strips.
Assemble the Pitas or Tortillas
Evenly distribute the shredded iceberg lettuce into your 4 pita pockets or onto the whole-wheat tortillas.
Add the prepared Halloumi, diced tomatoes,cucumbers, and onions, then drizzle generously with the garlic yogurt sauce.
