Easy Homemade Crunchy Muesli Recipe with Oats, Nuts & Honey

Make your own homemade crunchy muesli with oats, almonds, hazelnuts, honey, brown sugar and cinnamon. This easy baked granola-style recipe is wonderfully crisp, naturally customisable and much more affordable than many store-bought breakfast cereals. Add dried fruit or chocolate chips to create your perfect crunchy breakfast!

Equipment

  • 1 large mixing bowl
  • 1 Small saucepan
  • Blender or food processor
  • 1 baking sheet
  • 1 Parchment paper
  • 1 wooden spoon or spatula

What you need
  

For the Crunchy Muesli

  • 400 gr (14.1 oz) rolled oats
  • 75 gr (2.6 oz) hazelnuts
  • 75 gr (2.6 oz) almonds, peeled or unpeeled
  • 1 tsp cinnamon
  • 10 g (about 0.35 oz) packet vanilla sugar
  • 200 gr (7.1 oz) brown sugar
  • 200 gr (7.1 oz) honey
  • 50 ml (3 Tbsp + 1 tsp ) sunflower oil

Optional additions

  • 50 gr 1.8 oz dried banana
  • 50 gr 1.8 oz raisins
  • 50 gr 1.8 oz dried cranberries
  • 50 gr 1.8 oz chocolate chips

How to prepare
 

Prepare the Crunchy Granola

  • Add the honey, brown sugar and sunflower oil to a small saucepan. Heat gently, stirring until the sugar has dissolved.
  • Coarsely chop the almonds and hazelnuts in a blender or food processor. Combine them with the rolled oats, cinnamon and vanilla sugar in a large mixing bowl.
  • Pour the warm honey mixture over the oat and nut mixture and stir thoroughly until everything is evenly coated.
  • Line a baking sheet with parchment paper and spread the mixture evenly over it.
  • Bake in a preheated oven at 150℃ (300°F) using the convection setting for 15–25 minutes, depending on how crunchy and caramelised you like your granola.
  • Stir the mixture after 10 minutes to ensure that it caramelises evenly. If you bake it for longer than 20 minutes, stir again every 5 minutes to prevent it from browning too much.
  • Remove from the oven and allow the granola to cool completely. Once cooled, break it into crunchy pieces or flakes.

Add Your Favourite Toppings

  • Once the granola has cooled completely, mix in your choice of dried fruit and chocolate chips.
  • You can store your homemade crunchy granola in an airtight container for up to 3 weeks – if it lasts that long!

Homemade Granola Bars

  • You can also turn this recipe into homemade granola bars. Instead of breaking the baked mixture into pieces, allow it to cool slightly, then cut it into bars while it is still firm but not completely hardened.
  • Once completely cooled, dip one side of each bar into melted dark couverture chocolate and allow the chocolate to set.
