During Highschool we used to meet in an Italian Cafeteria next to school for ice cream or coffee.

My favorite ice cup this time was cold coffee with Amaretto, vanilla ice cream and those small Italian cookies called Amarettini! Now here is the recipe for a cake tasting at least as good as the ice cream version .

What you need:Amarettini Cake

6 eggs
200 gr sugar
1 pck. vanilla sugar
1 pinch of salt
200 gr melted butter
250 gr Mascapone
1/4 bottle bitter almond aroma (ex. Dr. Oetker)
450 gr all-purpose flour
1 pck. baking powder
appr. 150 ml milk
peel of one orange
125 gr Amarettini cookies

How to prepare:

Beat the eggs with the sugar, vanilla sugar and salt with an electric mixer until foamy. Add the Mascapone, butter, bitter almond aroma and orange peel.
Mix and sieve the flour with the baking powder and add slowly to the egg mixture. Add as much milk as necessary to be a nice and smooth dough.
Fold the Amarettini cookies into the dough.
Pour the dough into a greased round baking tin and cook in the preheated oven at 175 ºC for approximately 40 minutes.
